When it comes to Thai noodle soups, the first dishes that probably come to mind are Thai Boat Noodles or Thai Fish Ball Noodle Soup. However, this time we’re exploring a dish that isn’t commonly found on the tourist menu. Unlike Thai Boat Noodles, its broth is mainly simmered for a long time with Chinese herbs, star anise, licorice, cinnamon, soy sauce, rock sugar, and duck, creating a style similar to “braised-flavor soup.” It doesn’t use blood to thicken the broth, so the soup is clear yet dark in color, with a naturally sweet and mellow taste.

Late-Night Braised Duck Noodle Soup in Huai Khwang

This time, we came to Bangkok’s Huai Khwang Night Market, an area famous for its night markets and late-night food stalls. Among them, there’s one spot known for its authentic braised duck noodle soup.

The shop is called Chicken Rice 4 Sergeants (ข้าวมันไก่ 4 จ่า). The name literally translates to “Chicken Rice 4 Sergeants.” There are two shops in the Huai Khwang area, one branch located in the bustling Huai Khwang Night Market (open from 6:00 PM to 4:00 AM), and another branch on the other side of Huai Khwang (open from 6:00 AM to 6:00 PM).

The restaurant specializes in four signature dishes:

  • Braised Duck Noodle Soup

  • Hainanese Chicken Rice

  • Thai Wonton Noodles

  • Fish Ball Noodle Soup

Personally, I think their braised duck noodle soup is the best.

A Rich and Aromatic Soup

The soup base is slow-cooked with Chinese herbs, spices, and duck, creating a deep, flavorful broth.

Aside from duck noodle soup, you can also order extra duck meat on its own, served with a savory-sweet dipping sauce.

Each bowl of braised duck noodle soup typically comes with duck meat, duck intestines, and duck blood. 

If you’re not a fan of offal, you can request a bowl with only duck meat.

A Bowl of Comfort

When the steaming hot bowl of duck noodle soup is served, the aroma is irresistible.

The broth, infused with dozens of herbs, spices, and duck, is enriched with fragrant garlic oil, giving it a smooth and slightly sweet flavor. The duck meat is tender and never dry. For noodles, you can choose between rice noodles, wide flat noodles, or egg noodles — each offering a different texture.

To enhance the flavor, don’t forget the essential Thai condiments on the table: chili oil, vinegar, fish sauce, and sugar.


If you enjoy spicy food, I highly recommend adding their house-made chili oil — it gives the soup more depth and a richer taste.

 

Affordable Local Favorite

A bowl of duck noodle soup costs around 60 THB (about 1.5–2 USD). Even better, you can add duck feet or duck wings — three pieces for just 10 THB, which is an amazing deal.

If you’re traveling in Bangkok, beyond the must-visit restaurants and night markets, don’t miss out on this humble yet flavorful bowl of braised duck noodle soup. There’s no fancy plating, but it delivers the authentic taste of everyday Thai life.
